Union Oyster House is the oldest continuous service restaurant in America, interestingly located in a building which prior to it's opening, housed an exiled French monarch. This seems to be the first restaurant specialising in a latest trend of the time (oysters) and to public hype, rather than providing a selection of meals based on seasonal produce
