When John Plankinton sold out to his long-time general manager, Patrick Cudahy, the new proprietor kept the old Menomonee Valley plant open until 1893 when, pressed for space and tired of complaints about foul odors, Cudahy decided to move. "I got a county map," he recalled, "looked it over, and selected a site located about two miles south of the south limits of Milwaukee on the Chicago & North Western Railroad." The result was the village of Cudahy, which was incorporated in 1895. Although other packers turned down invitations to follow him south, Patrick Cudahy's suburb, known unofficially as "Porkopolils," gave the meat industry a new center in the region.
