Booze is naturally something that goes hand in hand with people, quite possibly being the reason people settled down and farmed. Beer was knowingly made as far back as (mentioned above) about 10,000 BC(E). Even the Bible mentions Noah planting grape vineyards on Mt. Ararat in Turkey. The base process is simple, just adding water, naturally occuring yeast, and some source of sugar like honey or fruit, in the right proportions and waiting is enough to make a light beer or wine. An upper limit of 15% alcohol (by volume?) was the case until distillation was discovered in the 8th and 9th centuries by Arabs, and only came into documented use, by Europeans, in the 12th century. It’s from this resource that brandy, whisky, gin, rum, and vodka originated, with concentrations of 40 to 55%.
