Dr. Willem-Karel Dicke, a Dutch pediatrician, published a paper in 1941 about his clinical observations and the effects that a wheat-free diet had on his patients. Eventually, scientists figured out that people with celiac disease were sensitive to gluten and as such the gluten-free diet was born.
