A brewery in France asked Pasteur to come and investigate why vats of alcohol would go bad. Pasteur discovers microbial fermentation while studying the causes of spoilage in beer and wine. Good wine is only yeast (big cells) while bad wine is yeast and bacteria (big & little cells). He came to conclusion that a solution was to kill the germs using pasteurization.
