DR. Royal Lee was a critic of commercially produced white flour in the 1920s. He believed the flour caused increasing health problems in the American public due to its lack of nutrition caused by removing the nutrient-dense bran and germ from the wheat kernel. He advocated for whole wheat flour and designed and manufactured the first flour mill for home use.
